Cheddar Chive Biscuits

Ingredients

  • 2 c self rising flour
  • 1 T baking powder
  • 1 t salt
  • ½ cup butter
  • 1 c buttermilk
  • 1 c shredded cheddar cheese
  • 2 T chopped chives

Instructions

  • In a large bowl, whisk together flour, baking powder, baking soda, and salt.
  • Cut in cold butter with a pastry cutter or a fork, or just use your fingers. Mix until mixture is like pebbles.
  • Slowly pour in cold buttermilk. Stir to combine.
  • Add the cheddar cheese and chives and stir to combine. Dough will be sticky, so be sure to use a floured surface when you empty it from the bowl to knead.
  • Knead dough 4– 6 times. Be careful not to over knead the dough, so the biscuits stay light and fluffy. Spread the dough out about ¾ inch thick and cut biscuits.
  • Place cut biscuits on an ungreased baking sheet and place in freezer while preheating oven to 425 degrees F, 10–15 minutes.
  • When oven reaches 425 degrees, remove biscuits from freezer and top with melted butter. Bake in the oven for 15 - 18 minutes.
  • When the biscuits come out of the oven, immediately brush them with melted butter on them.
