Little baby chickens, bathed in garlic, parmesan cheese, herbs and butter. It really doesn’t get much better does it? Since they’re little, they capture flavor extremely well. The individual sized nature of game hens makes them an excellent option for dinner parties. I’ve been to dinners where each person was served half a game hen. I’ve also been to dinners where each person was served a whole game hen. Either way, the presentation can be stunning and they will taste amazing.
Ingredients
- 2 game hens
- 1 tbsp garlic powder
- 1 tbsp poultry seasoning
- 1 tbsp basil
- 1 tbsp thyme
- 1 tbsp parsley
- 1 ½ c mirepoix diced celery, carrots and onions
- Olive oil
For the parmesan garlic butter…
- 1 cup butter
- ½ cup grated parmesan cheese
- 1 tbsp garlic powder
- Salt & pepper to taste
Instructions
- Preheat oven to 375 degrees.
- Lightly coat the game hens with olive oil.
- Stuff the inside of the game hens with the mirepoix.
- Generously season the outside of the game hens.
- Roast in the oven for approximately 60 – 75 minutes, until the game hens reach an internal temperature of 165 degrees.
- While game hens are in the oven, melt the butter. And add the parmesan cheese and garlic powder; stir to combine.
- When the game hens are done, pour on the butter mixture.
