Key Lime is one of those things you either love it or you don’t. Thankfully I fall into the category of people who love it! I also love pound cakes. Put them together and a beautiful baby is born. It’s my pleasure to introduce you to Key Lime Pound Cake. I’m not really a baker, but pound cakes are my go-to. They are very forgiving and it’s pretty difficult to mess up. So the next step, naturally, is creating your favorite flavors in a pound cake. I think that this is very likely my favorite flavored pound cake. But, I can’t say that with certainty, because I’m likely to try something tomorrow and then I’ll be in a pickle trying to decide which one I like most. I take my pound cakes very seriously! Anyway, I’ve had lost of requests for this recipe, so here it is!
Ingredients
For the cake…
- 3 cups cake flour
- 3 sticks butter
- 2 tbsp vegetable oil
- 3 cups sugar
- 6 eggs
- 1 cup buttermilk
- 1 t vanilla
- Zest of 1 lime
- ¼ cup key lime juice
- ½ tsp salt
For the glaze…
- 2 cups powdered sugar
- 2 – 3 tbsp key lime juice
- 1 tbsp milk
- 1 tsp vanilla
Instructions
For the cake…
- Preheat oven to 325 degrees.
- Cream the butter.
- Add sugar; cream together.
- Add the vegetable oil, combine thoroughly.
- Add eggs 1 at a time, ensuring each egg is incorporated before adding the next.
- Add key lime juice and combine; add the lime zest.
- Alternate adding flour and buttermilk.
- Combine well; do not overmix.
- Bake in a greased cake pan at 1 hour 15 minutes to 1 hour 30 minutes (or until toothpick comes out clean).
- Remove from oven and flip the pan after 10 – 15 minutes.
For the glaze…
- Adding the key lime juice 1 tbsp at a time, whisk ingredients together until desired consistency is achieved.
- Allow the cake to cool completely before drizzling the icing over it.
