Avocado Aioli

Burgers and things need sauces!  Mayonnaise is the most common of the sauces on burgers, but dare I raise the stakes!  Aioli is a cousin to mayonnaise.  Both creamy, but aioli tends to be fresher and smoother (in my opinion!).  Avocados are enjoying a moment in society right now.  They've always been tasty, they've always been versatile, but for some reason I've noticed a rise in their popularity over the last several years.  Outside of the obligatory guacamole, there really are a lot of things you can do with avocados.  Enter:  Avocado Aioli.  This smooth and creamy spread with a touch of garlic and lemon juice, takes burgers and sandwiches to the next level.  I promise....I guarantee....you will find it hard to believe how good this is!
Servings 1 cup

Ingredients
  

  • 4 egg yolks
  • 1/2 avocado, mashed
  • 1 cup olive oil
  • 1 tsp Salt
  • 1 Tbsp garlic powder
  • Juice of one lemon

Instructions
 

  • Combine egg yolks until smooth.
  • Add mashed avocado. Combine until smooth.
  • Slowly drizzle in olive oil.
  • Add salt, garlic powder and lemon juice.
  • Taste and Enjoy!
